Chablis Vieilles Vignes, Daniel-Etienne Defaix 2021
This cuvée is sourced from vines the age of which is between 45 and 70 years. A wine of exceptional concentration for a village level appellation, this wine is always a true expression of the kimmeridgian soils that make Chablis so distinctive. Aged for thirty months before release, Defaix’s old vines Chablis is richly dense with a classic “pierre a fusil” bouquet and long mineral-infused finish.
This old vine Chablis is as iconic as the rolling green hills where it was produced. It’s bursting with sumptuous notes of lemon, lime, brioche, and honeysuckle, with accents of dried herbs and medicinal tea. For its price, this is a wine of extraordinary depth and quality, perfect for those seeking a new underground favourite.
Domaine Daniel-Etienne Defaix is located on Kimmeridgian soil, in one of the oldest parts of Chablis. Despite being founded almost 4 centuries ago, the winery is still a family-run business. The domain spans just 28 hectares, but those are planted exclusively with Chardonnay - a statement of intent, and the ultimate sign of commitment to crafting refined wines from this famous Burgundy grape.
