Daftmill Single Cask UK Exclusive Cask #097 is a first fill oloroso sherry butt that was hand picked by Berry Bros & Rudd. It was distilled in winter 2011 and matured on the ground floor of their dunnage warehouse at Daftmill before being bottled exclusively for the United Kingdom.

Nose: Rich and indulgent, with an initial burst of dried fruits — figs, dates, and raisins — reminiscent of a classic Christmas cake. Layers of dark caramel, toffee, and molasses follow, underpinned by a subtle nuttiness, like roasted hazelnuts and almonds. Hints of orange zest and baking spices — cinnamon, nutmeg, and clove — mingle with gentle oak influence and a whisper of leather.
Palate: Velvety and full-bodied, the sherry cask influence is immediately apparent. Waves of dark fruit compote, black cherries, and plums wash over the palate, balanced by rich dark chocolate and espresso notes. The oak brings structure and warmth, imparting hints of toasted vanilla and old leather. Subtle spice builds — ginger, clove, and a touch of cracked black pepper — adding complexity without overpowering the sweetness.
Finish: Long and satisfying, with lingering notes of dark fruit, cocoa, and warming spice. The dried fruits and nutty undertones persist, gradually giving way to a gentle woodiness and a touch of tobacco leaf. A final whisper of sweet, sherried richness leaves a lasting impression.
