This is the fourth batch of Filey Bay STR Finish from the Spirit of Yorkshire Distillery. The whisky begins life in bourbon casks to impart American oak creamy sweetness to the light and fruity Yorkshire malt before it's transferred to STR casks for a finishing period. STR refers to red wine casks that have been shaved, toasted and re-charred, making them super interactive, imbuing the whisky with aromatic spice and red fruit flavours in a short space of time.
Nose: Redcurrants, cinder toffee, vanilla ice cream and toasted oak.
Palate: Nut milk chocolate, marmalade, and fruit-studded scones.
Finish: Nutmeg and caramel.
